Dr. Sumali Fernando is a Senior Lecturer at the Department of Food Science and Technology, Faculty of Agriculture, University of Ruhuna. Her research interests encompass a broad spectrum of food science, including the extraction and analysis of phytochemicals, comprehensive composition analysis of various foods, valorization of food waste into valuable products, and the development of innovative functional food products aimed at enhancing health and nutrition. In addition to her academic and research roles, Dr. Fernando is actively engaged in professional service as a council member of the Association of SAARCC FOODS Sri Lanka, contributing to regional collaboration and advancement in Food Science and Technology.
